Vegan Biscuits with Peanut Butter Frosting

Ingredients

  • 115gr oat flour
  • 135gr gluten free flour
  • 4 tbsp coconut sugar
  • 4 tbsp coconut butter
  • 1 tsp baking powder
  • 3 tbsp nut milk (I use almond)
  • 4tbsp maple syrup

Topping

  • 4 tbsp peanut butter
  • 100gr melted chocolate
  • 1 tbsp maple syrup

Preparation

  1. Preheat oven to 160°C

  2. Mix the dry ingredients for the biscuits first.

  3. Then add the wet ingredients and stir until a soft dough forms.

  4. Roll out the dough and cut out biscuits with a biscuit cutter or a glass.

  5. Bake on a baking sheet for about 12-15 minutes.

  6. Let the biscuits cool.

  7. Meanwhile mix the peanut butter and syrup.

  8. Melt the chocolate

  9. Top the biscuits first with the peanut butter mixture and then with the melted chocolate.

  10. If you want, keep them in the fridge.
