Vegan Peanut Butter Cup Protein Pancakes

Ingredients

  • 3 tablespoons aquafaba
  • 1 flax egg
  • 1/4 cup applesauce or soy yogurt
  • 1 tablespoon peanut butter
  • 1 scoop vanilla protein
  • 1.5 tablespoons cacao powder
  • 1/3 cup self-raising flour
  • 1 tablespoon coconut flour
  • splash of plant milk

Chocolate sauce

  • cacao powder
  • tahini
  • splash of water

Preparation

  1. Whisk together 3 tablespoons aquafaba, 1 flax egg, 1/4 cup applesauce or soy yogurt, and 1 tablespoon peanut butter.

  2. Add a scoop of vanilla protein, 1.5 tablespoons cacao powder, 1/3 cup self-raising flour, and 1 tablespoon coconut flour.

  3. Add a splash of plant milk to make the batter creamy.

  4. Mix cacao powder, tahini, and a splash of water to make the raw chocolate sauce.

  5. Layer with a peanut butter cup, runny peanut butter, raw chocolate sauce, and cacao nibs, and serve with blueberries and coconut yogurt on the side.
