Vegan Peanut Butter Cup Protein Pancakes
Ingredients
- 3 tablespoons aquafaba
- 1 flax egg
- 1/4 cup applesauce or soy yogurt
- 1 tablespoon peanut butter
- 1 scoop vanilla protein
- 1.5 tablespoons cacao powder
- 1/3 cup self-raising flour
- 1 tablespoon coconut flour
- splash of plant milk
Chocolate sauce
- cacao powder
- tahini
- splash of water
Preparation
Whisk together 3 tablespoons aquafaba, 1 flax egg, 1/4 cup applesauce or soy yogurt, and 1 tablespoon peanut butter.
Add a scoop of vanilla protein, 1.5 tablespoons cacao powder, 1/3 cup self-raising flour, and 1 tablespoon coconut flour.
Add a splash of plant milk to make the batter creamy.
Mix cacao powder, tahini, and a splash of water to make the raw chocolate sauce.
Layer with a peanut butter cup, runny peanut butter, raw chocolate sauce, and cacao nibs, and serve with blueberries and coconut yogurt on the side.
