Vegan Pink Beetroot Pancakes
Ingredients
- 160g plain flour
- 1 tbsp baking powder
- 1/4 tsp sea salt
- 2 tbsp golden caster
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- 250ml soya milk (or oat)
- 2 tbsp vegan butter, melted
- 80g beetroot, grated
Preparation
Mix dry ingredients together in a bowl: flour, baking powder, salt, and golden caster
In a separate bowl, combine wet ingredients: maple syrup, vanilla extract, soya milk, melted vegan butter, and grated beetroot
Gradually add wet mixture to dry mixture and stir until just combined, avoiding overmixing
Heat a non-stick pan or griddle over medium heat, lightly grease if necessary, and pour batter to form pancakes. Cook until bubbles appear on the surface, then flip and cook until golden brown on both sides
