Vegan Spicy Tomato Tuna Rolls

Ingredients

  • 4-5 roma tomatoes
  • 1/4 cup @califiafarms Go Coconuts
  • 1/3 cup vegan mayo
  • 1 T sriracha
  • 1 tsp Sugar
  • 1/4 tsp Salt
  • 1 T Sesame oil
  • 1 T sesame seeds
  • 2 tsp soy sauce
  • seaweed
  • sticky rice
  • asparagus
  • avocado
  • cucumber

Preparation

  1. Boil water in a big pot.

  2. Poke holes all around your tomatoes.

  3. Place tomatoes in boiling water until skin starts to peel off.

  4. Quickly place in ice water and peel off the skin.

  5. Slice around the seeds of the tomatoes and roughly chop.

  6. Place chopped tomatoes in a bowl with vegan mayo, go coconuts, sriracha, sugar, salt, sesame oil, sesame seeds, and soy sauce.

  7. Strain to remove some liquid, but not all.

  8. Make rolls using seaweed, sticky rice, asparagus, avocado, and cucumber.
