Bacon Spinach Gnocchi

Ingredients

  • pre made gnocchi (or home made if you have the time!)
  • coconut cream
  • vegan bacon (can use soy sauce marinated tofu)
  • leek
  • basil
  • spinach
  • parsley
  • frozen peas
  • mustard
  • salt
  • nutritional yeast

Preparation

  1. Fry leek and bacon for 10 minutes

  2. Add coconut cream, turn fry pan to low and cover

  3. Chop spinach, basil and parsley

  4. Add greens, cooked gnocchi and all other ingredients to the pan

  5. Cover and cook for another 10 minutes

  6. Cook gnocchi as per pack instructions

  7. Serve :)
