Brownies

Ingredients

  • 1 can black beans, drained and rinsed
  • 1/4 cup dried apricots/prunes/raisins/dates, soaked in 1 to 2 tbs boiling water and mashed into a paste
  • 1/4 cup cocoa powder
  • 1/4 cup nut butter
  • 1 tbs ground flax
  • 1/4 tsp baking soda
  • pinch salt

Preparation

  1. Blend all ingredients and bake in a parchment lined small loaf tin (mine is a 1lb loaf tin) until toothpick emerges clean, 18-20 minutes
