Vegan Five-Ingredient Fudge Brownies

Ingredients

  • 1 can black beans
  • 1/4 cup dried apricots, prunes, raisins, or dates
  • 1/4 cup cocoa powder
  • 1/4 cup nut butter
  • 1 tablespoon ground flax
  • 1/4 teaspoon baking soda
  • Pinch of salt

Preparation

  1. Drain and rinse the black beans.

  2. Soak the dried apricots, prunes, raisins, or dates in 1 to 2 tablespoons boiling water and mash into a paste.

  3. Combine all ingredients and blend them together.

  4. Pour the mixture into a parchment-lined small loaf tin (such as a 1-pound loaf tin).

  5. Bake until a toothpick inserted comes out clean, about 18 to 20 minutes.
