Chocolatey Blueberry Oatmeal Bake
Ingredients
- 1 cup rolled oats
- 1 ripe banana
- 2 tablespoons ground flaxseed meal
- 1/2 medium zucchini
- 1 scoop vegan mint cacao protein powder
- 3 tablespoons cacao powder
- 1/2 to 2/3 cup almond milk
- 1 teaspoon vanilla extract
- 3/4 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon sea salt
- 2/3 cup blueberries
Preparation
Mash the banana in a bowl, then add flaxseed meal and a bit of water to thicken while you grate the zucchini.
Add the zucchini and stir in the remaining ingredients to create the batter, incorporating half of the blueberries and reserving the other half for topping.
Transfer the mixture to a baking pan or ramekin and bake for 30-35 minutes at 350°F, noting that baking time may depend on the size of the dish.
Top with creamy almond butter, Trader Joe's vegan vanilla bean cashew yogurt, and the reserved blueberries, then enjoy.
