Jack’s Mom’s Chocolate Chunk Cookies
Ingredients
- 1.5 cups all purpose flour
- 1 cup stone ground whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1.5 teaspoons salt
- 1/2 pound (2 sticks) of unsalted butter, softened
- 1 cup sugar
- 1 cup packed dark brown sugar
- 1 teaspoon vanilla
- 1 large egg, room temperature
- 2 large egg yolks, room temperature
- 12 ounces semisweet chocolate, chopped into small chunks
Preparation
Preheat oven to 350 degrees
Line baking sheet with parchment paper
In a large bowl, sift together the flours, baking soda, baking powder and salt
Add butter and sugars to a stand mixer
Beat on medium-low speed until a paste forms with no visible large lumps
Add vanilla
Adjust mixer to low speed and add in egg and egg yolks, one a time, mixing well in between
Once combined, slowly add in the dry ingredients
Mix until just combined
Add in chocolate and stir with a wooden spoon
Scoop about a ping pong balls worth of batter and form into a ball
Place on baking sheet about 2-3 inches apart and press half way down with your fingers (they will spread)
Top with a sprinkling of the Maldon sea salt (optional)
Bake for 12-13 minutes until the sides have just turned golden brown
Cool for a few minutes minutes on the pan and then transfer to a rack to cool completely
Store in an air tight container
