Loaded Potato Lentil Soup

Ingredients

  • 1.5L veg stock
  • 1 can of diced tomatoes
  • 1 tablespoon tomato paste
  • 1 can of lentils
  • 1 large potato
  • Onion
  • Garlic
  • Frozen peas
  • Macaroni (or any other small pasta)
  • Salt & pepper
  • Dried thyme
  • Spinach

Preparation

  1. Fry potatoes, garlic and onion until onion is translucent

  2. Add stock, tomato paste, diced tomatoes and all seasonings. Simmer with the lid on for half an hour or so

  3. Taste test your soup and adjust seasonings

  4. Add frozen peas, macaroni and spinach. Cook for another 10 minutes. Done
