Pesto

Ingredients

  • fresh basil (i used 2 bunches)⁣
  • 1 tb minced garlic⁣
  • juice of one lemon⁣
  • 3 tb of nutritional yeast (found at whole foods, amazon or any grocery)⁣
  • white cheddar or garlic parm popcorn kernel seasonings (game changer) & pink salt to taste⁣
  • 3 + cups of spinach (the more the better)⁣
  • chicken broth (just a splash if it’s too dry when blending)⁣

Preparation

  1. Place all above ingredients in a blender, i used my vitamix which i love! blend until the desired consistency you wish

  2. This recipe will get ya 2 ish servings, but you can play around with amount of ingredients to make a bigger batch

  3. Store in a closed container in the fridge for up to 3-5 days

  4. You can use pesto for anything! with zoodles like i did, onto of pizza, pasta, onto of chicken, veggies, in sandwiches and even mixed in with spaghetti squash for a lower carb option than pasta! the options are endless!
