Pesto
Ingredients
- fresh basil (i used 2 bunches)
- 1 tb minced garlic
- juice of one lemon
- 3 tb of nutritional yeast (found at whole foods, amazon or any grocery)
- white cheddar or garlic parm popcorn kernel seasonings (game changer) & pink salt to taste
- 3 + cups of spinach (the more the better)
- chicken broth (just a splash if it’s too dry when blending)
Preparation
Place all above ingredients in a blender, i used my vitamix which i love! blend until the desired consistency you wish
This recipe will get ya 2 ish servings, but you can play around with amount of ingredients to make a bigger batch
Store in a closed container in the fridge for up to 3-5 days
You can use pesto for anything! with zoodles like i did, onto of pizza, pasta, onto of chicken, veggies, in sandwiches and even mixed in with spaghetti squash for a lower carb option than pasta! the options are endless!
