Simple 3-Minute Nourishing Stir Fry Sauce

Ingredients

  • 1 large thumb ginger
  • 1 garlic clove
  • handful fresh coriander
  • juice of 1/2 a lemon
  • 2 Tbsp peanut butter
  • 1 Tbsp agave syrup
  • 3 tbsp tamari (or soy) sauce
  • 1 tsp chilli oil
  • 3-4 Tbsp coconut milk
  • 1/2 tsp black pepper

Preparation

  1. Blend all ingredients together until smooth.

  2. Serve with tofu, a variety of vegetables, and noodles of your choice.

  3. This sauce can also be used as a dip for vegetable autumn rolls.

  4. Substitutions: Use any sweetener instead of agave syrup; Use soy sauce or coconut aminos instead of tamari.
