Simple Asparagus Pasta with Bacon
Ingredients
- spaghetti (as per package instructions)
- salt (for boiling water)
- 6 pieces bacon
- olive oil
- diced asparagus
- salt and pepper to taste
- chili flakes to taste
- 3 minced garlic cloves
- reserved pasta water
- optional: 1/4 cup shredded pecorino cheese
Preparation
Boil water in a large pot and add salt once boiling.
Cook spaghetti as per package instructions, reserving 1/4 cup pasta water.
Cook 6 pieces of bacon; remove from heat, remove excess grease, and add a splash of olive oil.
Add diced asparagus, salt and pepper, chili flakes, and cook for 5 minutes.
Chop bacon and return to pan with 3 minced garlic cloves; cook for an additional minute.
Drain noodles and add back to pot with 2 tbsp olive oil, splash of pasta water, bacon and asparagus mixture, and optional pecorino.
Toss everything for several minutes.
Serve with cracked black pepper. Note: Substitute bacon with a veggie option for a vegetarian version.
