Spicy Roasted Cauliflower and Tofu Curry

Ingredients

  • 3 finely chopped shallots
  • 1 tablespoon grated ginger
  • 2 cups water
  • 1 cube pressed and cut tofu
  • 1 small cauliflower cut in florets
  • 1/2 tablespoon olive oil
  • Salt

Paste

  • 1/2 cup coconut cream
  • 1 teaspoon turmeric
  • 1 teaspoon ginger powder
  • 1 teaspoon asafoetida
  • 1 tablespoon cumin powder
  • 3 teaspoons smoked paprika
  • 2 teaspoons chili powder
  • 2 tablespoons coconut yogurt
  • 1 tablespoon olive oil

Marinade

  • 2 tablespoons coconut yogurt
  • 1 tablespoon cumin powder
  • 1 teaspoon turmeric
  • 1 tablespoon chili powder
  • 1/2 tablespoon olive oil
  • 1 tablespoon arrowroot

Preparation

  1. Place tofu and cauliflower in a bowl and add the marinade ingredients.

  2. Transfer to a baking tray and roast for 30 minutes.

  3. Finish under the grill for 5-10 minutes for a crispy charred texture.

  4. Mix together the paste ingredients to make a paste.

  5. Heat olive oil in a pan and add shallots, ginger, and tofu.

  6. When onions are translucent, add the paste and cook stirring for a few minutes until oil begins to separate.

  7. Add water and bring to a simmer.

  8. Season as desired and serve topped with cauliflower.
