Tasty Tofu Stir Fry with Vegetables
Ingredients
- 1 package extra firm tofu
- 1/4 cup coconut aminos
- 2 tbsp apple cider vinegar
- 1 tbsp maple syrup
- 1 tsp garlic
- 1/2 tsp ginger
- 1 zucchini
- 8 oz mushrooms
- 1 red onion
- olive oil
- 2 tbsp tapioca flour or corn starch
- additional 1/4 cup coconut aminos
Preparation
Press and cut tofu into 1-inch cubes.
Mix tofu with 1/4 cup coconut aminos, 2 tbsp apple cider vinegar, 1 tbsp maple syrup, 1 tsp garlic, and 1/2 tsp ginger in a bowl; let marinate for 30 minutes.
Heat a skillet over medium heat.
Sauté cut zucchini, mushrooms, and red onion in olive oil for 5 minutes over medium heat.
Add marinated tofu to one side of the skillet and add another 1/4 cup coconut aminos to everything; cook for 5 minutes.
Add 2 tbsp tapioca flour or corn starch to thicken the sauce; cook until tofu is crispy.
