Tasty Tofu Stir Fry with Vegetables

Ingredients

  • 1 package extra firm tofu
  • 1/4 cup coconut aminos
  • 2 tbsp apple cider vinegar
  • 1 tbsp maple syrup
  • 1 tsp garlic
  • 1/2 tsp ginger
  • 1 zucchini
  • 8 oz mushrooms
  • 1 red onion
  • olive oil
  • 2 tbsp tapioca flour or corn starch
  • additional 1/4 cup coconut aminos

Preparation

  1. Press and cut tofu into 1-inch cubes.

  2. Mix tofu with 1/4 cup coconut aminos, 2 tbsp apple cider vinegar, 1 tbsp maple syrup, 1 tsp garlic, and 1/2 tsp ginger in a bowl; let marinate for 30 minutes.

  3. Heat a skillet over medium heat.

  4. Sauté cut zucchini, mushrooms, and red onion in olive oil for 5 minutes over medium heat.

  5. Add marinated tofu to one side of the skillet and add another 1/4 cup coconut aminos to everything; cook for 5 minutes.

  6. Add 2 tbsp tapioca flour or corn starch to thicken the sauce; cook until tofu is crispy.

  7. Enjoy the dish.
