Vegan Crunch Wrap Supreme
Ingredients
- 2 tbs of olive oil
- 2 cups of mushrooms, diced
- 1 tsp of garlic powder
- 1 tsp of tajin *
- 1/2 cup of corn
- 1/2 cup of cooked rice
- salt/pepper to taste
- 4. add your favorite veggie toppings and black beans (see below)!

- 1 tbs of olive oil
- 1 shallot, small
- 1 tomato, roughly chopped
- handful of cilantro
- 1 can of black beans
- 1/2 tsp of cumin
- juice of 1/2 lime
Preparation
Sauté cilantro, shallots, tomato, olive oil for 5-6 minutes.
Add black beans with half of the can brine, cumin, and lime juice. Cook for another 5-10 more minutes.
Add it all to your food processor and process until smooth.
