Blackbean and Mushroom Burger
Ingredients
- 6 portobello mushrooms
- 1 can of black beans (or red kidney beans)
- 1/2 cup oats
- 1 tsp cumin
- 1 tbsp tamari sauce
- flour (or gluten free flour)
- 1/2 cup coriander
- 2 cloves of garlic
- 1 red onion
- olive oil
- salt & pepper to taste
Preparation
Chop mushrooms and fry in a saucepan with olive oil until golden brown
Chop onion and lightly fry in olive oil, with chopped garlic, then add all fried ingredients to a food processor
Drain beans and add to food processor
Add coriander roughly chopped
Add oats, cumin, tamari, and cracked pepper
Blend into a thick paste
Sprinkle flour onto a plate
Use a quarter cup measure to form a burger from the burger paste
Roll in flour and shape into burger
Cook in olive oil
Drain on a paper towel, then serve in a healthy seeded bun with your fave burger fillers
