Easy Vegan Pasta Meatballs with Beans

Ingredients

  • 4 cups cooked wholewheat pasta
  • 1 can drained black beans
  • 4 tablespoons barbecue sauce
  • 2 tablespoons tomato puree
  • Pinch of pepper
  • Pinch of salt
  • 2 tablespoons olive oil
  • 1 large finely chopped red onion
  • 2 minced garlic cloves
  • 2 tablespoons finely chopped thyme
  • Flour for handling mixture
  • Tomato sauce for simmering

Preparation

  1. Blend the pasta, black beans, barbecue sauce, tomato puree, pepper, and salt in a processor.

  2. Heat olive oil in a pan and stir fry the red onion, garlic, and thyme with salt and pepper.

  3. Mix the blended mixture with the stir-fried mixture.

  4. Form the mixture into balls, using flour on your hands to prevent sticking.

  5. Fry the balls in oil until slightly crispy and colored.

  6. Simmer the balls in tomato sauce for 10 minutes.
