Vegan Meatballs with Black Beans and Pasta
Ingredients
- 4 cups wholewheat pasta (cooked)
- 1 can black beans (drained)
- 4 tbsp barbecue sauce
- 2 tbsp tomato puree
- good pinch pepper
- good pinch salt
- 2 tbsp olive oil
- 1 large red onion (finely chopped)
- 2 cloves garlic (minced)
- 2 tbsp thyme (finely chopped)
Preparation
Blend in a processor: 4 cups cooked wholewheat pasta, 1 can drained black beans, 4 tablespoons barbecue sauce, 2 tablespoons tomato puree, a good pinch of pepper, and a good pinch of salt.
Stir fry: Heat 2 tablespoons olive oil in a pan, add 1 large finely chopped red onion, 2 minced garlic cloves, 2 tablespoons finely chopped thyme, and season with a good pinch of salt and a good pinch of pepper.
Mix the blended mixture with the stir-fried mixture, form into balls (use flour on hands to prevent sticking as the mixture is sticky), fry in oil in a pan until skins are slightly crispy and colored, then drop into a big pan with tomato sauce and let simmer for 10 minutes.
