Vegan Black Bean Meatballs with Barbecue Sauce

Ingredients

  • 4 cups wholewheat pasta (cooked)
  • 1 can black beans (drained)
  • 4 tbsp barbecue sauce
  • 2 tbsp tomato puree
  • good pinch pepper
  • good pinch salt

Stir fry mix

  • 2 tbsp olive oil
  • 1 large red onion (finely chopped)
  • 2 cloves garlic (minced)
  • 2 tbsp thyme (finely chopped)
  • good pinch salt
  • good pinch pepper

Preparation

  1. Blend the first set of ingredients in a processor until well combined.

  2. Stir fry the second set of ingredients in olive oil until softened and fragrant.

  3. Mix the blended and stir-fried mixtures together.

  4. Form the mixture into balls, using flour on hands to handle stickiness.

  5. Fry the balls in oil in a pan until skins are slightly crispy and colored.

  6. Drop the fried balls into a big pan with tomato sauce and let them simmer for 10 minutes.
