Vegan Black Bean Meatballs with Barbecue Sauce
Ingredients
- 4 cups wholewheat pasta (cooked)
- 1 can black beans (drained)
- 4 tbsp barbecue sauce
- 2 tbsp tomato puree
- good pinch pepper
- good pinch salt
Stir fry mix
- 2 tbsp olive oil
- 1 large red onion (finely chopped)
- 2 cloves garlic (minced)
- 2 tbsp thyme (finely chopped)
- good pinch salt
- good pinch pepper
Preparation
Blend the first set of ingredients in a processor until well combined.
Stir fry the second set of ingredients in olive oil until softened and fragrant.
Mix the blended and stir-fried mixtures together.
Form the mixture into balls, using flour on hands to handle stickiness.
Fry the balls in oil in a pan until skins are slightly crispy and colored.
Drop the fried balls into a big pan with tomato sauce and let them simmer for 10 minutes.
