Creamy Bean Pasta with Sundried Tomatoes, Mushrooms, and Thyme

Ingredients

  • 1 onion
  • 1 clove of garlic
  • 250 g mushrooms
  • 100 g sundried tomatoes
  • 2 handful of arugula
  • 1.5 dl vegan cream (using oatly)
  • 1 tsp thyme
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • Pasta for 2 (I am using bean pasta)

Preparation

  1. Cook the pasta according to package instructions

  2. In a pan, add chopped onion and garlic in some oil.

  3. Add the mushrooms and let everything fry off for a few minutes.

  4. When the mushrooms have some colour, add the arugula and the sundried tomatoes.

  5. Stir and add the rest of the ingredients, the cream and the spices.

  6. Add cooked pasta to the pan and combine everything together.
