Vegan Mushroom Meatballs with Herbs and Spices

Ingredients

  • 1 small white onion (diced)
  • 1 1/4 cups (120g) mushrooms (sliced)
  • 1/2 cup (50g) oat flour
  • 1/2 cup (50g) breadcrumbs
  • 1/4 cup (15g) coriander
  • 1 tsp minced garlic
  • 1 tbsp nutritional yeast
  • 1 flax seed egg
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1/4 cup soy sauce
  • Olive oil

Preparation

  1. Heat the olive oil in a large frying pan over medium heat and cook the onions until they start to brown.

  2. Add the mushrooms, turn the heat up to high, and cook for 10-15 minutes.

  3. Remove from the heat and allow the mixture to cool down.

  4. Add the mushroom and onion mixture to a food processor along with the rest of the ingredients except olive oil and process until desired texture.

  5. Cover the mixture and refrigerate for 1 hour.

  6. Form the mixture into 8 balls and fry in a little olive oil over medium heat until cooked and crisp.

  7. Serve with red lentils, greens, cheese, and tomato puree.
