Vegan Mushroom Meatballs with Herbs and Spices
Ingredients
- 1 small white onion (diced)
- 1 1/4 cups (120g) mushrooms (sliced)
- 1/2 cup (50g) oat flour
- 1/2 cup (50g) breadcrumbs
- 1/4 cup (15g) coriander
- 1 tsp minced garlic
- 1 tbsp nutritional yeast
- 1 flax seed egg
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
- 1/4 cup soy sauce
- Olive oil
Preparation
Heat the olive oil in a large frying pan over medium heat and cook the onions until they start to brown.
Add the mushrooms, turn the heat up to high, and cook for 10-15 minutes.
Remove from the heat and allow the mixture to cool down.
Add the mushroom and onion mixture to a food processor along with the rest of the ingredients except olive oil and process until desired texture.
Cover the mixture and refrigerate for 1 hour.
Form the mixture into 8 balls and fry in a little olive oil over medium heat until cooked and crisp.
Serve with red lentils, greens, cheese, and tomato puree.
