Asparagus and Basil Pasta with Creamy Sauce
Ingredients
- 2 portions of your favorite pasta
- 2 shallots
- 10 green asparagus
- 1 bunch basil
- 1/2 package plant-based cream
- 50g pine nuts
- 4 tablespoons nutritional yeast
- 2 garlic cloves
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt, pepper
Preparation
Cook your pasta
Wash asparagus and chop into pieces (chop away the ends)
Fry in oil for about 5 minutes
Place half of it in a bowl and set aside
Mix the other half with basil, oil, salt, pepper, lemon juice, cream, pine nuts and nutritional yeast in a mixer or with a blender
Add water if needed
Chop garlic and shallots, lightly fry in oil
Add the sauce
Cook for about two minutes
Mix in your pasta
Serve with the rest of the asparagus and some more basil
