Easy Vegan Pasta Meatballs with Black Beans

Ingredients

  • 4 cups wholewheat pasta (cooked)
  • 1 can black beans (drained)
  • 4 tbsp barbecue sauce
  • 2 tbsp tomato puree
  • good pinch pepper
  • good pinch salt
  • 2 tbsp olive oil
  • 1 large red onion (finely chopped)
  • 2 cloves garlic (minced)
  • 2 tbsp thyme (finely chopped)
  • good pinch salt
  • good pinch pepper

Preparation

  1. Blend in a processor: 4 cups cooked wholewheat pasta, 1 can drained black beans, 4 tbsp barbecue sauce, 2 tbsp tomato puree, a good pinch of pepper, and a good pinch of salt.

  2. Stir fry in a pan: 2 tbsp olive oil, 1 large finely chopped red onion, 2 minced garlic cloves, 2 tbsp finely chopped thyme, a good pinch of salt, and a good pinch of pepper.

  3. Mix the blended mixture with the stir-fried mixture.

  4. Form the mixture into balls, using flour on hands to prevent sticking.

  5. Fry the balls in oil in a pan until slightly crispy and colored.

  6. Drop the fried balls into a big pan with tomato sauce and let them simmer for 10 minutes.
