Easy Vegan Pasta Meatballs with Black Beans
Ingredients
- 4 cups wholewheat pasta (cooked)
- 1 can black beans (drained)
- 4 tbsp barbecue sauce
- 2 tbsp tomato puree
- good pinch pepper
- good pinch salt
- 2 tbsp olive oil
- 1 large red onion (finely chopped)
- 2 cloves garlic (minced)
- 2 tbsp thyme (finely chopped)
- good pinch salt
- good pinch pepper
Preparation
Blend in a processor: 4 cups cooked wholewheat pasta, 1 can drained black beans, 4 tbsp barbecue sauce, 2 tbsp tomato puree, a good pinch of pepper, and a good pinch of salt.
Stir fry in a pan: 2 tbsp olive oil, 1 large finely chopped red onion, 2 minced garlic cloves, 2 tbsp finely chopped thyme, a good pinch of salt, and a good pinch of pepper.
Mix the blended mixture with the stir-fried mixture.
Form the mixture into balls, using flour on hands to prevent sticking.
Fry the balls in oil in a pan until slightly crispy and colored.
Drop the fried balls into a big pan with tomato sauce and let them simmer for 10 minutes.
