Easy Vegan Croquettes with Veggies and Spices

Ingredients

  • 1 large carrot
  • 200g white cabbage
  • 4 medium potatoes
  • 1 tsp chopped garlic
  • 1 tsp paprika
  • 1 tsp ground black pepper
  • 1 tsp salt
  • 200g gram flour
  • chopped coriander roughly 30g (handful)

Preparation

  1. In a food processor, add the grater blade and grate the carrot, cabbage, and potatoes.

  2. Transfer the grated vegetables to a bowl and add the garlic, paprika, black pepper, salt, gram flour, and coriander.

  3. Form the mixture into croquettes with your hands; the mixture may feel soggy but that's normal.

  4. Optionally, coat the croquettes with breadcrumbs.

  5. Heat 1-2 tablespoons of oil (such as rapeseed) in a frying pan over medium heat.

  6. Shallow fry the croquettes, turning to brown on all sides.

  7. Serve hot with lemon wedges, any sauce, or yoghurt.

  8. Note: Omit black pepper if kids don't like spice for a milder version.
