Easy Vegan Croquettes with Veggies and Spices
Ingredients
- 1 large carrot
- 200g white cabbage
- 4 medium potatoes
- 1 tsp chopped garlic
- 1 tsp paprika
- 1 tsp ground black pepper
- 1 tsp salt
- 200g gram flour
- chopped coriander roughly 30g (handful)
Preparation
In a food processor, add the grater blade and grate the carrot, cabbage, and potatoes.
Transfer the grated vegetables to a bowl and add the garlic, paprika, black pepper, salt, gram flour, and coriander.
Form the mixture into croquettes with your hands; the mixture may feel soggy but that's normal.
Optionally, coat the croquettes with breadcrumbs.
Heat 1-2 tablespoons of oil (such as rapeseed) in a frying pan over medium heat.
Shallow fry the croquettes, turning to brown on all sides.
Serve hot with lemon wedges, any sauce, or yoghurt.
Note: Omit black pepper if kids don't like spice for a milder version.
