Easy Vegan Croquettes with Fresh Vegetables

Ingredients

  • 1 large carrot
  • 200g white cabbage
  • 4 medium potatoes
  • 1 tsp chopped garlic
  • 1 tsp paprika
  • 1 tsp ground black pepper
  • 1 tsp salt
  • 200g gram flour
  • chopped coriander roughly 30g (handful)

Preparation

  1. In a food processor, add the grater blade and grate the carrot, cabbage, and potatoes.

  2. Transfer the grated mixture to a bowl and add the garlic, paprika, black pepper, salt, gram flour, and coriander.

  3. Form croquettes with your hands; the mixture may feel soggy due to released water, but proceed without fear.

  4. Optionally coat the croquettes with breadcrumbs.

  5. Heat 1-2 tablespoons of oil (such as rapeseed) in a frying pan over medium heat.

  6. Shallow fry the croquettes, turning them to brown on all sides.

  7. Serve hot with lemon wedges, any sauce of choice, or yoghurt.
