Vegan Cabbage Fritters
Ingredients
- 2 cups chopped white cabbage
- 1 cup chopped red onion
- 1 cup chopped coriander
- 1 chopped mild green chilly
- 1/2 tbsp chopped ginger
- 1/4 tsp coarse black pepper
- 1/2 tsp chopped garlic
- 1/4 tsp paprika powder
- 1/2 tbsp salt, or to taste
- 6 tbsp gram flour
- 6 tbsp corn flour
- 1/4 cup water
Preparation
Chop the white cabbage in a food processor.
Mix in all the other ingredients except for the flours.
Add the flours and mix in. The cabbage will release water, so adjust the consistency by adding more gram flour and corn flour in a 1:1 ratio.
Add water until the consistency is pasty, not a batter.
Set aside for 5 minutes and heat up a multi-grill to max.
Using a burger cutter or a round, metal cookie cutter as a mould, spray in some oil and fill with the fritter mixture, pressing down with a spoon to shape.
Turn when browned.
Serve with raita, tzatziki, chili sauce, yogurt, or have it as a full egg brunch on the fritter.
