Crispy Coconut Almond Rice Bars

Ingredients

  • 20g puffed whole grain rice
  • 40g almond butter (100% almonds)
  • 40g rice syrup (or other)
  • 2 tsp melted coconut oil
  • 50g dark chocolate (optional: sugar-free)
  • optional: salted almonds as topping

Preparation

  1. Melt the chocolate in a water bath while mixing all other ingredients.

  2. Press the rice mixture into a small square form.

  3. Cover with the chocolate and spread the almonds on top.

  4. Put it in the freezer.

  5. After about 60 minutes, cut into pieces.

  6. Eat them right away or store them in the freezer.

  7. Note: The drizzle is a storebought almond coconut date cream.
