Easy Homemade Rocky Road Squares

Ingredients

  • 300g chocolate (half dark and milk, or mixed)
  • 100g butter or margarine
  • 3 tbsp golden syrup (or honey or condensed milk)
  • 160g plain digestives or rich tea biscuits
  • 100g marshmallow
  • 30g cereal (rice krispies or similar)

Optional additions

  • pistachios or other nuts for decoration
  • dried fruits for decoration

Preparation

  1. Line a square 8 x 8 inch baking tin with greaseproof paper. Melt the chocolate, butter, and golden syrup in a heatproof glass bowl over a pan of boiling water until smooth and silky.

  2. Crush the digestive biscuits in a food bag with a rolling pin, leaving the pieces chunky. Chop a handful of pistachios or a nut of your choice finely and set aside. Chop dried fruits if they are large.

  3. In a large mixing bowl, add the melted chocolate mixture, crushed biscuits, marshmallows, cereal, and mix well to combine. Pour the mixture into the lined baking tin and level it out. Sprinkle the chopped nuts and dried fruits over the top and refrigerate for a couple of hours until firm. Cut into squares and enjoy.
