Homemade Vegan Peanut Butter Cups Delight

Ingredients

  • 2 slabs good quality dairy-free chocolate
  • 1 tablespoon coconut oil
  • 1/2 cup peanut butter
  • 2 tablespoons coconut oil
  • 2 tablespoons golden syrup, agave, or maple syrup

Preparation

  1. Line a muffin pan with cupcake wrappers.

  2. Mix 2 slabs of good quality dairy-free chocolate with 1 tablespoon of coconut oil and microwave in 30-second increments, stirring until melted.

  3. Spoon about a tablespoon of the chocolate mixture into each muffin cup and let set in the freezer for 10-15 minutes.

  4. Mix 1/2 cup peanut butter with 2 tablespoons coconut oil and 2 tablespoons golden syrup or agave or maple syrup. Microwave in 30-second increments until melted.

  5. Spoon a tablespoon of the peanut butter mixture into each cup.

  6. Let set in the freezer for half an hour. Keep refrigerated.
