Vegan Vanilla Magnums


  • 1/2 cup cashews, soaked 4-6 hours
  • 1/2 cup coconut cream
  • fresh vanilla bean, to taste
  • sweetener of choice, to taste (i used @totalsweetxylitol xylitol, but use whatever you have!)


  1. Place all ingredients into a high-speed blender and blitz completely smooth, adjusting sweetness as desired

  2. Pour into ice cream moulds, then leave to freeze overnight

  3. Once ready to serve, dunk in melted dark chocolate and enjoy!
