Vegan Vanilla Ice Cream Magnums

Ingredients

  • 1/2 cup cashews, soaked 4-6 hours
  • 1/2 cup coconut cream
  • Fresh vanilla bean, to taste
  • Sweetener of choice, to taste

Preparation

  1. Place all ingredients into a high-speed blender and blend until completely smooth, adjusting sweetness as desired.

  2. Pour into ice cream molds and freeze overnight.

  3. Melt dark chocolate

  4. Dunk the frozen magnums in the melted chocolate and serve.
