Curried Chicken Salad with Cashews and Raisins
Ingredients
- 3 chicken thighs or breasts (bone-in and skin-on recommended)
- Olive oil
- Salt and pepper
- 1/2 cup mayonnaise
- 1/2 cup plain Greek yogurt
- 3-4 tablespoons curry powder (homemade with coriander, cumin, turmeric, ginger, ground mustard, pepper, cinnamon, cardamom, and cayenne)
- 2 stalks celery, diced
- 1/2 cup red onion, finely diced
- 1 bunch cilantro, roughly chopped
- 1/4 cup raisins
- 1 cup cashews, roughly chopped
- Juice of 1 lemon
Preparation
Rub the chicken with olive oil, salt, and pepper.
Bake in the oven at 350 degrees until cooked through, then allow to cool before removing the skin and bones.
Meanwhile, mix all other ingredients in a bowl.
Once the chicken has cooled, dice it into bite-size chunks and toss it in the bowl with the other ingredients.
Mix everything together.
