Curried Chicken Salad

Ingredients

  • 3 chicken thighs or breasts (I highly suggest bone-in and skin-on)⁣
  • Olive oil⁣
  • Salt & pepper⁣
  • 1/2 cup your favorite mayo (I usually use @primalkitchen mayo)⁣
  • 1/2 cup plain greek yogurt⁣
  • 3-4 tbsp of CURRY POWDER (I make my own using coriander, cumin, turmeric, ginger, ground mustard, pepper, cinnamon, cardamom, and cayenne)⁣
  • 2 stalks of celery, diced⁣
  • 1/2 cup red onion, finely diced⁣
  • 1 bunch of cilantro, roughly chopped⁣
  • 1/4 cup raisins⁣
  • 1 cup cashews, roughly chopped⁣
  • Juice of 1 lemon⁣

Preparation

  1. Rub the chicken with olive oil, salt, and pepper⁣

  2. Bake in the oven at 350 until cooked through, then allow to cool before taking off the skin and bones⁣

  3. Meanwhile, mix up all other ingredients in a bowl⁣

  4. Once the chicken has cooled enough to chop, dice it into bite-size chunks and toss in the bowl with the other ingredients.⁣

  5. Mix it all up!⁣
