Curried Chicken Salad
Ingredients
- 3 chicken thighs or breasts (I highly suggest bone-in and skin-on)
- Olive oil
- Salt & pepper
- 1/2 cup your favorite mayo (I usually use @primalkitchen mayo)
- 1/2 cup plain greek yogurt
- 3-4 tbsp of CURRY POWDER (I make my own using coriander, cumin, turmeric, ginger, ground mustard, pepper, cinnamon, cardamom, and cayenne)
- 2 stalks of celery, diced
- 1/2 cup red onion, finely diced
- 1 bunch of cilantro, roughly chopped
- 1/4 cup raisins
- 1 cup cashews, roughly chopped
- Juice of 1 lemon
Preparation
Rub the chicken with olive oil, salt, and pepper
Bake in the oven at 350 until cooked through, then allow to cool before taking off the skin and bones
Meanwhile, mix up all other ingredients in a bowl
Once the chicken has cooled enough to chop, dice it into bite-size chunks and toss in the bowl with the other ingredients.
Mix it all up!
