Healthy Banana Carrot Bread

Ingredients

Wet

  • 1 1/2 cups mashed overripe banana
  • 1/2 cup finely grated carrot
  • 1/2 cup maple syrup, agave or honey
  • 1/4 cup plant milk
  • 1/4 cup oil or more plant milk for oil-free version
  • 2 tsp vanilla extract

Dry

  • 2 cups flour (white, spelt, or oat)
  • 1 tsp baking soda
  • 3/4 tsp baking powder
  • 3/4 tsp salt
  • 1 tsp cinnamon
  • 1/8 tsp nutmeg
  • crushed walnuts (optional)

Preparation

  1. Mix the wet ingredients.

  2. Mix the dry ingredients.

  3. Add the wet ingredients to the dry ingredients.

  4. Combine the mixture and put it in a baking tray.

  5. Bake in the oven at 180°C for 37 minutes.

  6. Turn off the oven and leave the bread in for 10 more minutes without opening the door.
