Healthy Banana Carrot Bread
Ingredients
Wet
- 1 1/2 cups mashed overripe banana
- 1/2 cup finely grated carrot
- 1/2 cup maple syrup, agave or honey
- 1/4 cup plant milk
- 1/4 cup oil or more plant milk for oil-free version
- 2 tsp vanilla extract
Dry
- 2 cups flour (white, spelt, or oat)
- 1 tsp baking soda
- 3/4 tsp baking powder
- 3/4 tsp salt
- 1 tsp cinnamon
- 1/8 tsp nutmeg
- crushed walnuts (optional)
Preparation
Mix the wet ingredients.
Mix the dry ingredients.
Add the wet ingredients to the dry ingredients.
Combine the mixture and put it in a baking tray.
Bake in the oven at 180°C for 37 minutes.
Turn off the oven and leave the bread in for 10 more minutes without opening the door.
