Vegan Gluten-Free Almond Butter Chocolate Chip Cookies

Ingredients

  • 1 cup flour (brown rice flour or white unbleached)
  • 1 cup almond meal
  • 5 tablespoons maple syrup
  • 1 tsp baking powder
  • Pinch of sea salt
  • 1/4 cup almond butter
  • 1/3 cup melted coconut oil
  • 100 grams Absolute Organic Dark Chocolate Chips
  • 4 tablespoons almond milk

Preparation

  1. Preheat oven to 180°C (350°F)

  2. Add all the dry ingredients into a bowl and mix until well combined

  3. Add all the wet ingredients into a bowl and whisk until a creamy mixture forms

  4. Slowly stir the wet mixture into the dry mixture until a cookie dough forms

  5. Add in the chocolate chips

  6. Roll into small balls and place them on a baking tray

  7. Bake for 12-15 minutes until golden brown
