Mango Sticky Oats in a Mug
Ingredients
- 5 tbsp (40-50g) porridge oats (works with gluten-free)
- 3 tbsp coconut yoghurt or milk + extra yoghurt to serve
- 1 tbsp sweetener/sugar/syrup
- 1/3 tsp baking powder
- Squeeze of lemon juice
- Few chunks of mango
- Sprinkle of desiccated coconut
Preparation
Put everything into a cup and mix until foamy, making sure all the oats are combined from the bottom of the mug. If you have a blender, blitz oats to a powder for a few seconds to enhance the cake-like texture. Clean the rim of the mug with your finger.
Microwave on high for 90 seconds or transfer into a lined oven-proof dish and cook in the oven for 15 minutes at 180C/350F/gas mark 4.
Give the mug a shake, then tip the mixture onto a plate. Top with extra yoghurt, a sprinkle of coconut, and chopped mango.
