Sweet Eggs for Breakfast

Ingredients

  • 200 - 400g white chocolate depending on how big your moulds are and how many you want to make
  • Granola
  • Yoghurt
  • Mango

Preparation

  1. Peel, chop and blend the mango

  2. Pour the pulp into the round mould and put in freezer to set for at least two hours ?Melt the white chocolate

  3. I do this by breaking into pieces into a glass bowl and microwaving for 30 second intervals, stirring at each interval

  4. When melted, pour into the egg moulds, swirling it around to coat the egg shape and scraping any excess off the sides

  5. Make sure it’s thick enough so it holds the filling later

  6. Put it in the fridge to set for at least an hour

  7. Or buy a ready made while chocolate egg and carefully cut in half with a slightly heated sharp knife

  8. When your eggshell and yolk are ready it’s a case of assembly

  9. Carefully remove the chocolate eggshell, fill with granola, top with yoghurt and smooth down with a spatula

  10. Remove the yolk from the moulds and place on top

  11. Serve and watch the smiles
