Amaranth Cookies with Bananas and Walnuts

Ingredients

  • 7-8 baby bananas (ripe)
  • 2-3 tbsp date/agave syrup
  • 1 tbsp avocado oil
  • 1.5-2 cups amaranth flour
  • 1.5 cups chopped walnuts
  • 1 cup dried mulberries or other fruit

Preparation

  1. Mash the bananas, date/agave syrup, and avocado oil together.

  2. Mix all ingredients together.

  3. Bake for 15-20 minutes at 400 degrees.

  4. Enjoy!
