Baked Sweet Potato Fries with Chipotle Dip

Ingredients

  • 3 medium sweet potatoes, peeled
  • 1 tbsp corn starch
  • 3 tbsp olive oil
  • 1/2 tbsp dried basil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • a big pinch of salt & pepper

Preparation

  1. Cut potatoes into fries as close in size as possible

  2. Rub with oil

  3. Mix together cornstarch, parsley, garlic powder, smoked paprika, salt & pepper and toss with fries

  4. Spread out fries in a single layer over two parchment lined baking sheets

  5. Bake in preheated oven at 425 degree F for 35-40 mins (depending on thickness of fries)

  6. Make chipotle mayo: 2 tbsp of my easy chipotle sauce, 1/4 cup vegan mayo, 1 tsp garlic powder

  7. Whisk all ingredients together until well combine
