Baked Sweet Potato Fries with Chipotle Dip
Ingredients
- 3 medium sweet potatoes, peeled
- 1 tbsp corn starch
- 3 tbsp olive oil
- 1/2 tbsp dried basil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- a big pinch of salt & pepper
Preparation
Cut potatoes into fries as close in size as possible
Rub with oil
Mix together cornstarch, parsley, garlic powder, smoked paprika, salt & pepper and toss with fries
Spread out fries in a single layer over two parchment lined baking sheets
Bake in preheated oven at 425 degree F for 35-40 mins (depending on thickness of fries)
Make chipotle mayo: 2 tbsp of my easy chipotle sauce, 1/4 cup vegan mayo, 1 tsp garlic powder
Whisk all ingredients together until well combine
