BBQ and Buffalo Marinated Chicken Wings

Ingredients

  • Chicken wings
  • All-purpose flour
  • Salt
  • Black pepper
  • Garlic granules
  • Chicken rub (e.g., JD Seasonings)
  • Coconut oil
  • BBQ sauce (e.g., Bullseye)
  • Sweet freedom light syrup
  • Franks Red Hot sauce
  • Spring onions
  • Fresh coriander
  • Salad greens (for serving)

Preparation

  1. Chop the chicken wings into three pieces and discard the wing tip, keeping the drumette and wingette.

  2. Marinate the wings in a mixture of flour, salt, pepper, garlic granules, and chicken rub for a few hours or overnight.

  3. Shallow fry the marinated wings in coconut oil for 1 minute on each side.

  4. Preheat the oven to 180°C

  5. Place the fried wings on a rack and bake in the oven for 15-20 minutes.

  6. Prepare the BBQ sauce by mixing BBQ sauce, light syrup, salt, pepper, and garlic granules.

  7. Prepare the buffalo sauce by mixing Franks Red Hot sauce, light syrup, salt, pepper, and garlic granules.

  8. Coat the baked wings in a combination of BBQ and buffalo sauces.

  9. Top with chopped spring onions and fresh coriander.

  10. Serve with salad.
