Black Bean Brownies

Ingredients

  • 1 can black beans (drained and rinsed well)
  • 3 tablespoons of milk
  • 3/4 cup medjool dates (pitted)
  • 1 tablespoon of cacao powder
  • 1 tablespoon of vegan chocolate protein powder from @petite_protein
  • 1/2 cup of peanut butter (@picspeanutbutter)
  • 1 tsp of vanilla extract
  • 1 tsp of baking powder
  • 1/2 cup of walnuts (keep a few for toppings)

Preparation

  1. Pour black beans into a blender or food processor and blitz until a thick paste forms. Then add the rest of the ingredients, blending until well combined

  2. Pour mixture into a tin, and place the remaining handful of walnuts on top of the batter. •

  3. Cook for 16min at 175 degrees Celsius

  4. Makes approx 8 brownies
