Vegan Black Bean Brownies

Ingredients

  • 1 can black beans (drained and rinsed well)
  • 3 tablespoons of milk
  • 3/4 cup medjool dates (pitted)
  • 1 tablespoon of cacao powder
  • 1 tablespoon of vegan chocolate protein powder from @petite_protein
  • 1/2 cup of peanut butter (@picspeanutbutter)
  • 1 tsp of vanilla extract
  • 1 tsp of baking powder
  • 1/2 cup of walnuts (keep a few for toppings)
  • 2 chia eggs (2 tablespoons of chia seeds and 6 tablespoons of water mixed together)

Preparation

  1. Preheat oven to 175 degrees Celsius

  2. Prepare chia eggs by mixing 2 tablespoons of chia seeds with 6 tablespoons of water and let sit to gel

  3. Pour black beans into a blender or food processor and blitz until a thick paste forms.

  4. Add the rest of the ingredients and blend until well combined.

  5. Pour mixture into a tin and place the remaining walnuts on top of the batter.

  6. Cook for 16 minutes at 175 degrees Celsius.
