Vegan Black Bean Brownies
Ingredients
- 1 can black beans (drained and rinsed well)
- 3 tablespoons of milk
- 3/4 cup medjool dates (pitted)
- 1 tablespoon of cacao powder
- 1 tablespoon of vegan chocolate protein powder from @petite_protein
- 1/2 cup of peanut butter (@picspeanutbutter)
- 1 tsp of vanilla extract
- 1 tsp of baking powder
- 1/2 cup of walnuts (keep a few for toppings)
- 2 chia eggs (2 tablespoons of chia seeds and 6 tablespoons of water mixed together)
Preparation
Preheat oven to 175 degrees Celsius
Prepare chia eggs by mixing 2 tablespoons of chia seeds with 6 tablespoons of water and let sit to gel
Pour black beans into a blender or food processor and blitz until a thick paste forms.
Add the rest of the ingredients and blend until well combined.
Pour mixture into a tin and place the remaining walnuts on top of the batter.
Cook for 16 minutes at 175 degrees Celsius.
