Crispy Baked Guacamole Spring Rolls
Ingredients
- 25 spring roll wrappers
- 3 medium avocados, mashed
- 1 small tomato, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, finely chopped
- 2 cloves of garlic, minced
- 1 lime, juiced
- A big pinch of salt and pepper
- 1 tablespoon olive or avocado oil for brushing
Preparation
Preheat oven to 400 degrees F
Lay a damp tea towel over the spring roll wrappers to prevent them from drying out.
Mix all the other ingredients together in a large bowl to make the guacamole filling.
One by one, place a wrapper in a diamond shape on a clean surface and scoop 1 tablespoon of the guacamole onto the middle.
Fold the top of the diamond down to make a triangle.
Wet the sides with a damp finger and fold the side points in to make an envelope shape, ensuring the points just touch without overlapping.
Carefully roll down to create the spring roll, but do not roll too tight to avoid breaking during baking.
Place the spring rolls on a parchment-lined baking sheet and brush with oil.
Bake in the preheated oven at 400 degrees F for 30 minutes, flipping at the halfway point.
