Depression Era Chocolate Cake with Healthy Twist

Ingredients

Dry

  • 1 1/2 cup all-purpose or spelt flour
  • 1 cup cane sugar
  • 1/4 cup raw cacao powder
  • 1 tsp baking soda
  • 1/2 tsp unrefined salt

Wet mix

  • 1/3 cup + 1 tbsp melted coconut oil
  • 1 tbsp apple cider vinegar or lemon juice
  • 1 tsp vanilla
  • 1 cup cold water

Preparation

  1. Mix dry ingredients together

  2. Mix wet ingredients together

  3. Combine wet mixture with dry mixture

  4. Pour into an 8x8 inch square pan slightly oiled and lined with parchment paper

  5. Bake for 30-40 minutes at 350 degrees Fahrenheit

Tips

  1. Use organic or non-organic ingredients as available

  2. The cake is moist and can be enjoyed plain or with optional frosting
