Easy Vegan Roasted Tomato Soup

Ingredients

  • 1 red pepper
  • 1 onion
  • 500 g cherry tomatoes
  • 5 cloves of garlic
  • 1 handful of fresh basil
  • 1 dl vegan cream
  • 1 cube of veggie stock
  • Salt and pepper
  • Olive oil

Preparation

  1. Add tomatoes, onion, red pepper, and garlic to a baking tray. Add salt, pepper, and a good amount of olive oil on top and bake in the oven for 30 minutes at 200 degrees.

  2. When the vegetables are done baking, add them to a blender together with the fresh basil, vegan cream, and veggie stock cube, and blend until smooth.

  3. If needed, transfer the soup to a pot and heat it up before eating.
