Easy Vegan Roasted Tomato Soup
Ingredients
- 1 red pepper
- 1 onion
- 500 g cherry tomatoes
- 5 cloves of garlic
- 1 handful of fresh basil
- 1 dl vegan cream
- 1 cube of veggie stock
- Salt and pepper
- Olive oil
Preparation
Add tomatoes, onion, red pepper, and garlic to a baking tray. Add salt, pepper, and a good amount of olive oil on top and bake in the oven for 30 minutes at 200 degrees.
When the vegetables are done baking, add them to a blender together with the fresh basil, vegan cream, and veggie stock cube, and blend until smooth.
If needed, transfer the soup to a pot and heat it up before eating.
