Focaccia Garden

Ingredients

  • 500g strong white bread flour
  • 10g salt
  • 3g fast-acting dried yeast
  • 400g cold water

Preparation

  1. Combine flour, salt & yeast. form a well and add the water, form a dough

  2. On a surface empty out all the dough and push and stretch it for ~5 mins

  3. Pour 60g olive oil into the bowl and add the dough, spread the oil over it and fold the dough (pull it up from the bottom, to the other side) and do this on all 4 sides [top, bottom, sides] - this is a fold

  4. Leave to rest for 30 mins, then fold the dough [on all 4 sides] 3 more times, with 30 mins in between

  5. Then place in the fridge 10 mins

  6. Preheat oven fan 230°C

  7. Lightly oil a baking tray and slide the dough on it, massage in the 20g of olive oil, press the dough out giving it dimples

  8. Top with toppings (see below) and leave to rest for 30 mins

  9. Sprinkle with flaky salt, bake for 15 mins and optionally glaze with more olive oil
