FODMAP Friendly Vegan Donuts

Ingredients

Wet mixture

  • 1/2 cup almond milk
  • 1/2 tsp apple cider vinegar
  • 1 chia egg
  • 1/4 cup melted coconut oil

Dry mixture

  • 1 cup tigernut flour
  • 1/2 cup coconut sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp nutmeg
  • 1/4 tsp vanilla
  • 1/4 tsp cinnamon

Icing

  • coconut oil
  • lemon juice
  • lemon zest
  • icing sugar

Preparation

  1. Combine the wet mixture in a bowl and allow it to sit for 5 minutes to develop a buttermilk-like consistency.

  2. Combine the wet and dry mixtures, stirring to combine.

  3. Heat the oven to 175°C.

  4. Lightly grease the donut pan and spoon the mixture into the molds, ensuring not to fill more than half full.

  5. Bake the donuts for approximately 18 minutes or until they spring back when touched.

  6. Prepare a simple lemon icing by mixing coconut oil, lemon juice, zest, and icing sugar.
