Healthy Homemade Granola with Nuts and Berries

Ingredients

  • 400g old fashioned oats
  • 100g goji berries
  • 50g cranberries
  • 100g Iranian pistachio
  • 100g mixed seeds
  • 50g sultanas
  • 50g pecans
  • 2 tablespoons coconut oil
  • 100ml maple syrup
  • 1/2 teaspoon sea salt
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 2 eggs

Preparation

  1. Mix all the dry ingredients together.

  2. Melt the coconut oil.

  3. Add maple syrup, sea salt, cinnamon, and vanilla extract to the melted oil and mix well.

  4. Combine the wet mixture with the dry ingredients.

  5. Separate the eggs and whisk the whites, then add to the mixture and stir well.

  6. Bake in a lined tin at 160°C for 30 minutes, turning periodically.

  7. Cool the mixture and store in a jar; it will keep for weeks and is great with yoghurt or milk.

  8. Note: This granola is not very sweet; add a tablespoon of sugar or sweetener if more sweetness is desired.
