Healthy Choco Prince Cookies
Ingredients
Biscuits
- 150g almond flour @bobsredmill @earthfoodsme
- 260g buckwheat flour @bobsredmill
- A pinch of sea salt
- 1 tsp baking powder
- 125ml coconut oil (melted) @earthsfinestme
- 125ml maple syrup
- 1 tsp organic vanilla extract
Ganache filling
- 260ml coconut cream @earthsfinestme
- 220g dark chocolate (85% cocoa) @lindtarabia
- 1/2 tsp vanilla bean powder
- 1 tbsp maple syrup
Preparation

Preheat the oven to 325ºF.
Prepare two large baking sheets with parchment paper.
Combine all the ingredients to make the dough, ensuring to mix the dry ingredients before adding the wet ones.
Mix until the batter reaches a dough-like consistency.
Dust a clean surface and roll out the dough.
Use a 4 cm cookie cutter to form the cookie shapes.
Reroll the remaining dough and repeat the rolling and cutting process.
Assemble the cookies on the baking tray using a spatula.
Bake in the oven for 10-12 minutes or until golden.
Chocolate ganache
Mix all ingredients except the chocolate in a saucepan.
Heat on medium flame until it simmers.
Add chunks of dark chocolate and stir until melted.
Ensure the ganache has a silky smooth consistency.
Refrigerate the ganache for a few hours.
Once set, spread it on top of the crispy biscuits.
