Homemade Plantain Bread with Seeds and Coconut

Ingredients

  • 3 over ripe plantains
  • 2 eggs
  • 1/2 unsweetened plain yogurt
  • 3/4 cup oil
  • 1 cup each of white and whole wheat flour
  • 1/2 sugar
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 tsp vanilla extract
  • 1/2 cup sunflower seeds
  • 1/2 cup rolled oats
  • 1/3 cup unsweetened shredded coconut

Preparation

  1. Mix everything together.

  2. Bake for 50-65 minutes in a 350F oven until a skewer inserted comes out clean.

  3. Adjust the sugar according to taste if it is not sweet enough.
