Homemade Plantain Bread with Seeds and Coconut
Ingredients
- 3 over ripe plantains
- 2 eggs
- 1/2 unsweetened plain yogurt
- 3/4 cup oil
- 1 cup each of white and whole wheat flour
- 1/2 sugar
- 1 tsp salt
- 1 tsp baking soda
- 2 tsp vanilla extract
- 1/2 cup sunflower seeds
- 1/2 cup rolled oats
- 1/3 cup unsweetened shredded coconut
Preparation
Mix everything together.
Bake for 50-65 minutes in a 350F oven until a skewer inserted comes out clean.
Adjust the sugar according to taste if it is not sweet enough.
