Homemade Pumpkin Bread with Icing
Ingredients
- 2 eggs
- 1 mashed banana
- 2 tbsp ghee butter
- 1 tsp vanilla paste or extract
- 1/2 tin pumpkin purée
- 2 tsp pumpkin spice
- 1 tsp baking powder
- 1/2 cup ground almonds
- 1/2 coconut flour
Icing
- cream cheese
- 1 tsp vanilla paste
Preparation
Preheat the oven to 180 degrees Celsius and line a 1lb loaf tin with baking paper.
Mix all the wet ingredients in a bowl.
Add the spice, baking powder and ground almonds. Mix well.
Add the coconut flour.
Add the mix to the prepared tin and bake for 30 minutes until a knife comes out clean.
Icing
Mix cream cheese with 1 tsp vanilla paste.
Allow the bread to cool completely before icing.
Optionally sprinkle with flaked almonds and pumpkin seeds. Enjoy!
