Homemade Pumpkin Bread with Icing

Ingredients

  • 2 eggs
  • 1 mashed banana
  • 2 tbsp ghee butter
  • 1 tsp vanilla paste or extract
  • 1/2 tin pumpkin purée
  • 2 tsp pumpkin spice
  • 1 tsp baking powder
  • 1/2 cup ground almonds
  • 1/2 coconut flour

Icing

  • cream cheese
  • 1 tsp vanilla paste

Preparation

  1. Preheat the oven to 180 degrees Celsius and line a 1lb loaf tin with baking paper.

  2. Mix all the wet ingredients in a bowl.

  3. Add the spice, baking powder and ground almonds. Mix well.

  4. Add the coconut flour.

  5. Add the mix to the prepared tin and bake for 30 minutes until a knife comes out clean.

Icing

  1. Mix cream cheese with 1 tsp vanilla paste.

  2. Allow the bread to cool completely before icing.

  3. Optionally sprinkle with flaked almonds and pumpkin seeds. Enjoy!
