Moorish Vegan “Cheese” Balls

Ingredients

  • 1 3/4 cups gluten free oat flour (i use @bobsredmill) … if you can’t find this & can tolerate it you can sub for coconut flour
  • 1/2 cup coconut flour (or extra gluten-free oat flour)
  • 2 tbsp nutritional yeast
  • pinch of himalayan salt
  • 1/2 cup mashed pumpkin puree (i make my own) • 1/4 cup peanut or macadamia butter
  • 1/5 cup organic coconut oil • 1 tbsp dairy free milk (i use @luzalmond original almond milk)
  • 1 tsp apple cider vinegar

Preparation

  1. In a large mixing bowl, combine the flour, nutritional yeast and mix well

  2. In a microwave safe bowl or stovetop, heat your nut butter with your oil until combined. Mix in your vinegar. Pour your wet mixture and pumpkin to the dry mixture and mix well. Depending on consistency, either add dairy free milk of choice or extra flour until a firm texture is formed

  3. Using your hands, form into small bite sized balls. Roll balls in optional nutritional yeast or desiccated coconut and place on a baking tray or plate. Bake on the oven until they become slightly golden (they should still be dough-like, not crunchy)
