Not So Healthy Blueberry Donuts

Ingredients

  • 1 1/2 cups plain flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 2 tbsp ground flax seed
  • 1 cup almond milk
  • 1 tsp apple cider vinegar
  • 1/2 tbsp vanilla bean paste
  • 1/3 cup rapeseed oil
  • 1/2 cup caster sugar
  • 1/2 cup blueberries

Preparation

  1. First mix the apple cider vinegar and almond milk together and set aside to separate

  2. Mix all the dry ingredients except flax seed together in a bowl. Add the rest of the wet ingredients and ground flax seed to the milk mixture and mix

  3. Stir the wet ingredients into the dry ingredients and mix well. Stir in the blueberries

  4. Spoon into greased donut moulds and bake for about 10 mins at 175°C or until a cocktail pick inserted in a donut comes out clean

  5. For the icing mix 2 cups icing sugar, 3 tbsp almond milk and 3 tbsp melted coconut oil together. Dip the donuts in the icing or pipe the icing onto them. If the icing is too stiff sit the bowl over some hot water to melt the coconut oil again and the icing will loosen up
